Lupini beans
In all supermarkets in Sharm, from small to big, you find these small whitish dried beans.
Lupinis (Egyptian: Tirmes) are an excellent snack, very popular not only in Egypt, but many Mediterranean countries. Without the brine soak, bitter alkaloids would make lupini beans inedible.
Lupini beans do have a high protein content (almost as high as soybeans) so they are great to serve as an appetizer or side dish when the meal does not have a major protein source. Great to be eaten instead of peanuts or pop-corn while watching TV.
Recipe: Lupini beans
Directions
* Pick over beans to remove any debris. Soak overnight, drain and rinse. Cover by several inches with fresh water and simmer for an hour.
* Drain, rinse well, and cover with salted water (about 1 tablespoon per quart of water). Refrigerate.
* Repeat this process every day for 5 days, or until the soaking brine is no longer bitter.
* Beans will keep for weeks, covered with lightly salted water and refrigerated.
* To serve as a snack, drain desired quantity of beans, drizzle with olive oil and freshly ground black pepper.
